How does Edge work on Normal Missions? Is it related to strength, range, or levels?

Edge is a percentage chance for any success you roll to generate another roll.

So, on a Difficulty 11 check any die(Level) that results in 11 or higher has an Edge% chance to add another die(Level) to your total.

If you have 10 edge and roll 20 successes on the check, on average you would roll an additional 2 levels against the challenge.

I don't know if the extra levels given by Edge can, themselves, generate extra levels through Edge.
